WHAT IS A MICRO BAKERY?
There are small businesses and then there are the very small businesses known as micro-businesses. Micro-businesses usually have fewer than two founders and build their business alongside an existing profession.
Everything is transparent and manageable at Otto e Nove (8e9) Micro Bakery. we have full control over the products we produce by hand. From purchasing From production to packaging, everything is planned down to the smallest detail and implemented with the highest quality standards.
In our Micro Bakery we only use products of the highest quality, only the best is good enough for us. Whenever possible, we use raw materials from the region. Exceptions are chocolate and candied fruits, which we need for our fine panettone and colombe. These raw materials give the panettone its unmistakable touch.
8e9 stands for quality not for quantity. The focus is always on the product and happy customers.
There are many reasons why small can be very powerful.

Our vision
Bread is a symbol of basic food.
Bread and water symbolize a staple food for survival. Bread is symbolically shared in different religions.
As a tradition, bread is given to people who move into a new house or apartment to wish them good luck in their new home.
However, in today's age, bread has lost its reputation. Much of what the industry understands by bread should not be allowed to be sold at all. Because it has long ceased to be the healthy and lovingly kneaded product that we have lived and passed on for generations. We want to change that again.
The Micro Bakery relies on manual work, craftsmanship and regional ingredients.

Our vision
Der Geschäftsführer und Gründer von Otto e Nove (8e9) ist leidenschaftlicher Foodnerd. In seiner Welt dreht sich alles rund ums Essen, ehrliche Produkte und Reisen. Er genoss verschiedene Stationen im In- und Ausland in der gehobenen Gastronomie. Nicht nur für seine ausgefallenen Kreationen war er bei seinen Gästen bekannt, sondern auch für seine puristischen Brote und kreativen Desserts.
Seine Passion für Sauerteigbrote begann schon früh in seiner Kindheit, nämlich in seinen Ferien in denen er seine Familie und Bekannte in Puglia, genauer gesagt in Gravina und Altamura besuchte. Herrlich duftende Focaccia, langsam vorsichtig köchelnde Ragùs, hausgemachte Orecchiette oder frisch gebackenes Brot aus dem Holzofen - begleiteten Marco schon von klein an und liessen ihn nie wieder los.
Diese traditionelle Küche, die auf Frische und lokale Zutaten basiert, verbindet er in seiner Micro Bakery Otto e Nove. Die Leidenschaft und der Respekt gegenüber dem Produkt machen die Philosophie bei 8e9 aus.
Durch einen Sportunfall musste er sein Leben neu überdenken, denn so weiter machen wie bis her konnte er nicht mehr. Aber Stagnation ist ein Fremdwort für Marco und so bildete er sich kontinuierlich weiter. Zuletzt mit einem Abschluss als Hôtelier und Restaurateur.
So machte er sich zur Aufgabe, all das Wissen über die erlernten Traditionen und die modernen Einflüsse aus den Ländern, in denen er arbeitete oder die er bereist hat, in die Backkunst der Otto e Nove Mikro Bakery zu vereinen und so ein einzigartiges Konzept zu erschaffen. Die für ein ganz neues Erlebnis sorgt: denn 8e9 steht für mehr Emotionen, Geschmacksexplosionen und Nachhaltigkeit auf dem Teller. Sie werden den Unterschied auf Ihrem Gaumen schmecken und das Nachhaltigkeitskonzept, wie auch die Produkte lieben lernen.
